Fermentation: This wine underwent a vinification process using native yeasts from Monte Belo do Sul. The MBS05 yeast, native to the boundaries of the Monte Belo IP (Protected Geographical Indication), was isolated and reproduced by Embrapa and is used exclusively for wines from the Monte Belo IP.
Sensory Notes: Aromas of fresh peach, orange blossom, green apple, and lemon. Perfectly balanced, it has medium acidity, medium body, fresh flavors of citrus fruits, peach, and apricot, and a mineral, slightly saline finish reminiscent of graphite.
Gastronomy: Pairs well with light dishes with delicate flavors, such as ceviche, sushi, green salads, and grilled fish.
Serving Temperature: 8 to 10ºC.
